Today I am making an amazing frittata, and here it is! Having the right cookware makes all the difference!
Let’s start with the ingredients, warning, my dad used to call me a food yuppie, so this may be a tad fancy!
-Eggs of course
-Heavy cream! For extra fluffiness.
-Bacon bits. I no longer use the huge bag of these bits from the big box store, I am now fancy and buy my bacon bits from the fancy store, so these bacon bits are from the pork belly!
-Fresh Summer tomato. Beefsteak preferably.
Since I am using tomato’s which have to soften, I am doing so with EVOO (extra virgin olive oil). Otherwise, my usual egg recipe includes adding a little EVOO to the mixture, you cannot taste the oil, but it also adds to the final dish!
Lastly, eggs should be cooked at a very low flame. In the old days I was always in a rush and used a high flame because I am always hungry! A low frame keeps the egg protein from breaking! I told you, food yuppie!

I felt like a burrito, so here is the dish I am serving to myself! Absolutely delicious, and yes, I made enough for a second breakfast for tomorrow, as I know I will be rushed to get on with my Monday, today is a slow-moving Sunday because I deserve it!
