Dr Pepper Rice Krispie Treats Recipe by Guest Writer George Gensler!
I love Dr Pepper! It’s my favorite soda. I look for it wherever I go (and I go places). Here’s the Japanese Dr Pepper I enjoyed on a recent trip to Hong Kong (thank you, Don Don Donki!) I even found Dr Pepper in Tahiti.
A few years ago, I made Rice Krispie treats with Hot Tamale Peeps and they were delicious! So, when Peeps came out with a Dr Pepper version, I started planning a batch of Dr Pepper Rice Krispie treats.
If you’re wondering what Peeps have to do with Rice Krispie treats, I’ll let you in on the secret. You can use any marshmallows to make Rice Krispie treats, including Peeps (well, almost any – I’m not sure how cereal marshmallows would do). You have to adjust the recipe a little, depending on which marshmallows you use, but Peeps work just as well as any bag of marshmallows you can find in the supermarket.
For the Dr Pepper Rice Krispie treats, I use 12 oz. of Dr Pepper Peeps, which is four of the 10-chick packs of Peeps. I’ve only seen the Dr Pepper Peeps in the 10-chick pack, so if you find a different sized pack, adjust accordingly. If you want them gooier, use more Peeps.
We start by melting the butter in a stock pot. I used 7 ounces of salted butter. You can brown the butter, if you like. I haven’t tried that yet but am considering it. Then you melt in your Dr Pepper Peeps.
They might take a little longer to melt and it’s a little disconcerting to see their eyes floating around until they melt, too, but in the end, they become a glorious pool of maroon-ish marshmallow goo.
Once the marshmallows have melted, take the pot off the heat and pour in 6 cups of Rice Krispies and stir until they’re coated in marshmallow goo.
The ingredient that takes these to the next level is Jelly Belly Dr Pepper jelly beans. I add a 3.5 ounce back of Dr Pepper Jelly Belly jellybeans and stir those in right before I pour the mixture into the buttered pan. (You can use a spray, too. I usually use the paper that wrapped the butter).
Use a buttered spatula to press the mixture firmly into the pan, then let them set. I forgot to time how long that takes, but you’ll know. Once they’re set, cut into whatever size and shape you want, and enjoy!
The magic of this recipe, like I mentioned above, is that you can use any flavor Peeps to make them. I’ve made them with Hot Tamale Peeps and Hot Tamale candies. I’ve seen Sour Patch Kids Peeps, which would work great with Sour Patch Kids candies mixed in. Cotton Candy Peeps with cotton candy Jelly Belly jellybeans. Sour Watermelon Peeps with Sour Watermelon Sour Patch Kids. For my next batch, I’m considering Candy Cane Peeps with crushed-up peppermint candies or candy cane sprinkles sprinkled on top. What would you make?
