My first recipe is simple and easy, and perfect for breakfast, or any meal if you are a rule breaker! It’s an omelet!
I remember my first cheese omelet at the diner with bacon pieces mixed in. It was delicious! So I started making it at home (with Coleman Ranch Bacon of course!), and eventually thought I would try something different – pieces of cut up sausage!
First I cook the sausage until it is nice and brown. And I always test one when it is done, just to make sure it is ready for the next step!
Then I sprinkle a healthy amount of sausage pieces into my egg mix. I am a firm believer that there should be a piece of sausage in every bite!
Simple boy, simple American cheese, a family favorite.
My open face cheese and sausage omelet is done. If you do not want open face, you can put your sausage pieces and cheese on one side of the pan and flip the egg over when it is almost finished cooking, your choice!
What’s for dinner after such a delicious breakfast you ask? Breaded chicken breast tenderloins! This is more of a staple, we eat fried chicken cutlets or tenderloins several times a week. It is perfect for my boys because my son loves to use different sauces every night (did you see the hot sauce selection he received for the holidays!), and my spouse will either cut the chicken into pieces and put in a salad, or request a nice starchy side dish. I use breadcrumbs with Italian seasoning. I occasionally use Panko breadcrumbs just to shake things up!
Tonight I used EVOO to fry my tenderloins! Extra Virgin Olive Oil is healthy and delicious!
This is a thing of beauty. Possibly one of my favorite dishes. I promise I only tested one!
Now for the side dish, I fry up some pancetta, add any cream sauce I can find, and throw in a can or bag of peas. Tonight’s starch was gnocchi, because I am fancy!
Needless to say, there are rarely leftovers in my house, after all, look at the delicious foods I cook!
