In preparation for my Chanukah Dinner Extravaganza, I wanted to have a test run to work out any kinks before I fed my full family, who would talk about all my food errors for the rest of my life, I had to at least try to circumvent that!
I made 2 recipes, 1 from the Hellmann’s website, and one from my mom.
The Hellman’s website recipe I used was the Turkey Casserole. I did make a few of my own adjustments, extra root vegetables and no cranberry sauce, that’s why I love cooking, you can be as creative as you like! This Turkey casserole was full of starches, so I knew it would be a hit, especially with my spouse. I have been there when he has ordered a macaroni dish with potatoes in it. This casserole recipe has stuffing and mashed potatoes in it. Wow. I was correct, he ate half the pan. It is December, holiday songs and decorations abound, there is no dieting allowed. So my second dish contained some starch as well!
My mom has made a delicious Broccoli Souffle for years now, she even used to bring one in as a monthly gift when she used to babysit my son.
Ingredients:
3×10 oz packages of chopped broccoli
1 large onion
3 carrots
1 celery stalk
4 eggs
1 packet onion soup mix
4 tablespoons of Matzo Meal mix (this may have originated as a passover dish!)
4 tablespoons of Hellmann’s Mayonnaise (2 ounces).
I saute the root vegetables until they are soft.
You cook the chopped broccoli and fully drain all liquid from the pot, and combine with the root veggies.
I add the matzo meal, onion soup mix, and Hellmann’s Mayonnaise and mix well.
I then beat the eggs until they are fluffy and mix everything together.
Put all combined ingredients in greased pan (my mom’s notes say 7×10 1/2 pyrex) and cook for 45 minutes at 375 degrees.
I do not often throw dinner parties where I do this much cooking in my Manhattan apartment which has a small kitchen. I did a fair amount of prep work the day before and it all came together perfectly. Everything was delicious and not very difficult at all!
And, while I was doing my research I saw some delicious other recipes I can’t wait to try, top of the list being mashed potatoes with Hellmann’s Mayonnaise!

Okay, I’m convinced… I *will* be making both the Turkey Casserole and Broccoli Souffle! One difference in mine, though… the cranberry sauce will definitely be added! 🙂
