I love iced coffee. I have some on hand in my refrigerator at all times. I make my own and it never tastes great so once I was introduced to International Delights Iced Coffee, I started to create a mixture of half my iced, bitter, black coffee, with half the mixture of the flavored International Delights. Instead of adding a chemical sweetener to make my own coffee mix bearable, I add this already made flavored coffee, and because it is not sugar free (they are working on that, I asked!), I just eat a few less cookies for breakfast. Now you know why I am not skinny!
This is also a treat for me in the afternoon. I usually get drowsy after lunch and too often succumb to a slight nap, right here at my computer. My own coffee is too strong for the afternoon so this International Delight comes in handy for a pick me up before I get my son from school. Calorie wise i am just substituting the candy bar I was going to have anyway. This is better use of my calories and it has caffeine, which hopefully will help me stay awake while I sit in the playground watching my son after school!

Mocha Chip Muffins
Deliciously moist muffins rich with mocha flavor.
1 ¾ cup flour
2 tsp baking powder
½ tsp baking soda
½ tsp salt
¾ cup sugar
1 cup semi-sweet chocolate chips
1 cup International Delight™ Mocha Iced Coffee
1/3 cup vegetable oil
1 tsp instant coffee
1 egg
2 tsp vanilla extract
Preheat oven to 400 degrees. Line a 12-cup muffin tin with paper liners. Whisk together dry ingredients in a large bowl. Stir in chocolate chips. In a separate bowl, whisk together remaining ingredients, stirring until coffee is dissolved. Add Iced Coffee mixture to flour mixture, stirring just until incorporated. Fill each muffin cup ¾ full. Bake for 18-20 minutes until tops spring back. Cool on a rack for 10 minutes, then remove from pan. Yield: 12 muffins
Iced Coffee Frappe
Reminiscent of the coffeehouse treat, yet so easy to make at home, I haven’t had a decent Frappe since I was in Greece!
1 cup International Delight™ Iced Coffee, any flavor
½ cup ice
½ cup vanilla, coffee or chocolate ice cream
½ tsp. vanilla extract
Combine all ingredients in a blender and blend until thick and smooth. Yield: 1 serving
Blended White Russian
A delicious and easy route to summer entertaining! Doesn’t it make sense to experiment with these new International Delight flavors?
1 cup International Delight™ Iced Coffee, any flavor
1/2 cup ice
1 ounce vodka
1 ounce coffee liqueur
Combine all ingredients in a blender and blend until smooth. Yield: 1 serving
Milk Chocolate Café Truffles
Simple ingredients create an elegant treat. OMG, I can make truffles at home now!
12 ounces milk chocolate chips
1/3 cup International Delight™ Iced Coffee, any flavor
1 tbsp. butter
chocolate sprinkles, cocoa powder, crushed candies, for rolling
Combine chocolate, Iced Coffee and butter in a saucepan over low heat. Cook, stirring constantly, until chocolate melts and mixture becomes smooth. Be careful not to let chocolate burn. Pour mixture into a shallow bowl and refrigerate overnight. To prepare, scoop out teaspoons of mixture and roll between palms to form balls. Roll each ball in sprinkles, cocoa or candy. Place truffles on a cookie sheet and refrigerate until set, about 15 minutes. Store in refrigerator. Yield: 30 truffles.

I’d seen this in the grocery store and wondered if it was any good, so hard to commit to a carton that size (especially not sugar free!) Glad to hear it was tasty. And the White Russian sounds great!
