Yesterday I made a pot of chicken soup. I had a choice, use my humongous pot and make a watery batch or use my medium pot and make a decent tasting batch. This time I chose the latter, I don’ always make the correct choice. I did buy too many vegetables and the pot was spilling over for the first hours of cooking, but I do have a rich, delicious, salty broth. I freeze most of it so we can have it for a few weeks.
You can see from the recipe above that somehow there is a chicken on the recipe and we don’ know how it got there. I believe this is the recipe from my grandma handed down to my mother. When I first tried my hand at this soup I took this recipe to the store and was old by the produce man that there was a chicken pic, I never noticed it and I think it is quite funny. It is clearly losing something in the translation here!
My grandmother made the most delicious chicken soup ever. My mother did not start making it until I was in my late 30’s, when she became a grandma, she grew up hating the chicken that cooked into a tasteless blob that she was forced to eat growing up. My mothers soup is not as good as my grandma’s although my niece and nephews do not know that. AND, my annoying spouse has the nerve to prefer my moms soup as well, he says the taste is multi-leveled. At least my son loves my soup, although for awhile he was taking Campbell’s noodle soup to school (until we found out the can was coated with cancer causing chemicals). That was insulting!
Anyway, when I started to make my own soup at the age of 45, it was like the mysteries of the world were suddenly opened to me. I was always at the mercy of the last 2 generations for my soup fix! We also use thin egg noodles with our soup, we call it lucscion. We do not use rice! My mother-in-law found out the I use beef bones in my chicken soup and told me that it was then not legitimate chicken soup. I took umbridge at this and quickly checked with the patent office and found that my percentage of chicken to beef was within the acceptable rates to legally call my soup CHICKEN!
